🧾 Ingredients
250 g spaghetti (or fettuccine)
2 egg yolks + 1 whole egg
50 g finely grated Parmesan cheese
1 tablespoon white miso paste
1 teaspoon gochujang (Korean chili paste)
(or chili flakes, to taste)
2 cloves garlic, minced
120 g bacon or pancetta (diced)
Freshly ground black pepper
Pasta cooking water (as needed)
Chopped green onions or parsley (for garnish)
👩🍳 Instructions
1️⃣ Cook the pasta
Boil the pasta in well-salted water until al dente. Reserve 1 cup of the pasta water, then drain.
2️⃣ Make the sauce
In a bowl, whisk together:
Egg yolks + whole egg
Parmesan cheese
Miso paste
Gochujang
Mix until smooth and creamy.
3️⃣ Cook the bacon
In a large pan over medium heat, cook the bacon until crispy.
Add garlic and sauté for 10 seconds (do not burn).
4️⃣ Combine pasta & pan
Add the hot pasta directly to the pan and turn off the heat.
5️⃣ Add the sauce
Pour in the egg mixture, tossing quickly.
Add reserved pasta water little by little until the sauce becomes silky and glossy.
⚠️ Important: Keep the heat off to avoid scrambling the eggs.
6️⃣ Serve
Finish with black pepper, extra Parmesan, and green onions.
