Ingredients
For the loaf:
.1 1/2 cups (180g) all-purpose flour
.1 tsp baking powder
.1/2 tsp baking soda
.1/2 tsp salt
.1 tsp ground cinnamon
.1/2 tsp ground nutmeg
.1/4 tsp ground ginger (optional)
.1/2 cup (120ml) vegetable oil or melted butter
.3/4 cup (150g) brown sugar
.2 large eggs
.1 tsp vanilla extract
.1 cup (240g) mashed cooked sweet potato (about 1 medium-large sweet potato)
.1/4 cup (60ml) milk or buttermilk
Optional mix-ins:
.1/2 cup chopped pecans or walnuts
.1/3 cup raisins or chopped dates
.Optional glaze (maple or cream cheese):
.1/2 cup powdered sugar
.1–2 tbsp milk or maple syrup
Splash of vanilla
Instructions
.1. Prep oven & pan:
.Preheat oven to 350°F (175°C).
Grease and line a 9×5-inch loaf pan with parchment paper.
.2. Dry ingredients:
In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices.
.3. Wet ingredients:
In a large bowl, whisk together oil, brown sugar, eggs, and vanilla until well combined.
Stir in mashed sweet potato and milk.
.4. Combine:
Add dry ingredients to the wet and mix until just combined.
Fold in nuts or dried fruit if using.
.5. Bake:
Pour batter into prepared loaf pan.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
.6. Optional glaze:
