Mini Raisin Loaves Recipe

These mini raisin loaves are soft, sweet, and perfect for a quick snack or breakfast. They’re filled with raisins and flavored with cinnamon, making them a comforting treat.

Ingredients:
.1 1/2 cups all-purpose flour
.1 teaspoon baking powder
.1/2 teaspoon baking soda
.1/2 teaspoon ground cinnamon
.1/4 teaspoon salt
.1/2 cup unsalted butter, softened
.1/2 cup brown sugar (packed)
.1 large egg
.1 teaspoon vanilla extract
.1/2 cup milk (whole or any preferred kind)
.1 1/4 cups raisins (soaked in warm water for 10 minutes, drained)

Instructions:
1. Preheat your oven to 350°F (175°C). Line 4 mini loaf pans with mini loaf baking cups
2. Whisk together the flour, baking powder, baking soda, cinnamon, and salt in a medium bowl. Set aside.
3. In a separate bowl, cream the butter and brown sugar together until light and fluffy (about 3 minutes).
4. Beat in the egg and vanilla extract until fully combined.
5. Add the dry ingredients to the wet ingredients in two batches, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
6. Divide the batter evenly among the prepared mini loaf pans, smoothing the tops with a spatula than add raisins to the top. If you like you may add raisins inside the batter beforehand.
8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
9. Cool the mini loaves in the pans for about 10 minutes before transferring to a wire rack to cool completely.

Tips:
For extra flavor, you can soak the raisins in warm water or orange juice for 10 minutes to plump them up before adding to the batter.
You can also add a handful of cinnamon chips or substitute some of the raisins with dried cranberries for a twist.
