Ultra-Moist Chocolate Chip Loaf Cake

Rich, moist, and packed with chocolatey goodness, this Chocolate Chip Loaf Cake is perfect for both beginner bakers and seasoned pros. It’s incredibly easy to make—just mix your wet and dry ingredients separately, combine, and bake. For an extra indulgent twist, finish it off with a smooth, glossy chocolate glaze.

Ingredients
For the Cake:

.200g (1 cup) caster sugar

.200g (7 oz / ¾ cup + 1 tbsp) unsalted butter, softened

.½ tsp vanilla extract

.4 large eggs

.200g (1¾ cups) self-raising flour

.40g (⅓ cup) cocoa powder

.40g (3 tbsp) caster sugar (for cocoa mixture)

.75ml (5 tbsp) warm milk

.100g (3.5 oz) dark chocolate chips or chopped dark chocolate

Optional Chocolate Glaze:

.2 tbsp cocoa powder

.3 tbsp icing sugar (confectioners’ sugar)

.2–3 tbsp Baileys (or milk/water for a kid-friendly version)

Instructions

1. Preheat & Prepare
Preheat your oven to 160°C / 320°F (Gas Mark 3).
Grease and flour a standard loaf tin, or line it with parchment paper.

2. Mix the Butter & Sugar
In a stand mixer or large bowl, beat the softened butter and 200g caster sugar together until light and creamy.

3. Add Eggs & Vanilla
Mix in the vanilla extract, then add the eggs one at a time, beating well after each addition.

4. Combine Dry Ingredients
In a separate bowl, sift together the self-raising flour.

5. Make the Cocoa Mixture
In a small bowl, whisk together the cocoa powder, 40g caster sugar, and warm milk until smooth. Add this to the main cake mixture and beat until fully incorporated.

6. Combine Everything
Gradually add the flour to the batter and mix on high speed for about 3 minutes, until the batter is smooth.
Fold in the chopped chocolate or chocolate chips.

7. Bake the Cake
Pour the batter into the prepared loaf tin and smooth the top.
Bake in the center of the oven for 55–60 minutes, or until a skewer inserted in the middle comes out clean.

8. Cool
Allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Optional Chocolate Glaze
If you’d like to top your cake with a luscious glaze:

1.In a bowl, mix 2 tbsp cocoa powder with 3 tbsp icing sugar.

2.Gradually add Baileys (or milk/water) until you reach a pourable consistency.

3.Drizzle over the cooled cake and let it set before serving.
