Ingredients:
2 lbs ground beef
1 cup bell pepper, chopped
1 cup onion, chopped
1/2 jalapeno pepper, seeded and chopped
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp Tony’s all purpose seasoning
1/4 cup dark brown sugar
1 cup plain breadcrumbs
2 eggs, lightly beaten
1/2 cup milk
Salt and pepper
1/2 cup bourbon
1/4 cup water
1 cup apricot jam
1/2 cup BBQ sauce
1 tbsp Sriracha
2 tbsp Worcestershire sauce
Instructions:
Preheat the oven to 350°F.
In a large mixing bowl, combine the ground beef, bell pepper, onion, jalapeno pepper, garlic powder, onion powder, Tony’s all purpose seasoning, brown sugar, breadcrumbs, eggs, milk, salt, and pepper.
Mix everything together until well combined.
Transfer the mixture to a 9×5-inch loaf pan and press it down gently.
In a small bowl, mix together the bourbon, water, apricot jam, BBQ sauce, Sriracha, and Worcestershire sauce to make the glaze.
Pour half of the glaze over the top of the meatloaf.
Bake for 45 minutes, then remove from the oven and pour the remaining glaze over the top of the meatloaf.
Bake for an additional 15-20 minutes, or until the internal temperature of the meatloaf reaches 160°F.
Let the meatloaf rest for 10 minutes before slicing and serving. Enjoy!
