Ingredients:
1/2 cup unsalted butter, room temperature
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup semi-sweet chocolate chips
Directions:
Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a large mixing bowl, beat butter and sugar together until light and fluffy.
Add eggs, one at a time, followed by vanilla extract and mashed bananas. Mix until well combined.
In a separate bowl, mix together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chips.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60-70 minutes or until a toothpick inserted into the center of the loaf comes out clean.
Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Serve warm, topped with extra chocolate chips, if desired.
