Ingredients :
100g self-breeding flour
100g caster sugar
100g soft butter
2 Eggs
Lemon peel 1
1 teaspoon vanilla essence
4 tbsp curd lemon
Method
1. Mix the flour, sugar, butter, egg, vanilla and lemon zest together until smooth,
2. Transfer the mixture to a well-greased dish and medium size microwave resistant. We used a 0.8 litre dish.
3. Microwave for 3-4 minutes (we made this sponge in 800W microwave in 3 minutes) until the sponge rises and is cooked well – a skewer inserted in the middle should come out clean.
4. Leave to rest while you place the lemon curd in a microwave-safe dish and heat for 30 seconds. Hit it so it’s glossy and soft, then generously place it on top of your sponge to serve.
