1 Syn Lemon Drizzle Cake

Ingredients:

For the cake
2 lemons
5 separate eggs
50g of self-raising flour
28g of Sweetener

For the drizzle

Juice of a lemon
20g of sweetener

Method:
Sift flour first to remove lumps.
Mix the flour, the zest of 2 lemons, the juice of a lemon, the sweetener and 5 egg yolks.
Beat the egg whites and add them to the flour mixture.
Transfer to a bread pan and bake at 180 ° C for about 30 minutes or until the knife comes out clean.
While cooking, mix the ingredients in a saucepan over low heat.
Once the cake is cooked, remove from the oven, pierce several times with the knife and pour in the drizzle. Return to oven at 100 ° C for another 10 minutes.
Take out of the oven and let it cool a little before cutting into 8 pieces.
You can serve with a spoonful of fat free vanilla yogurt and fruit.
