NGREDIENTS:
250g plain biscuits (I used vegan, GF scotch fingers from au )
1 1/2 cups desiccated coconut (mine is from )
2 tablespoons rum
1/2 cup au coconut condensed milk
Desiccated coconut for rolling
METHOD:
1. In a food processor (I used my ) add in the biscuits & coconut and blitz until fine crumbs
2. Add in the rum and condensed milk and blitz until the mixture clumps together like cookie dough
3. Divide the mixture into 20 even portions and roll into balls. Roll the balls in desiccated coconut to coat.
4. Store the balls in the fridge until ready to serve .
Note: if the mixture appears too soft, place it in the fridge for a while until it firms up more before rolling
