Ingredients:
3 cups leftover turkey or chicken cut into cubes
2 cups mixed veggies… whatever you want… I used peas, corn, and green beans
1/3 cup butter
1/3 cup flour
1 small onion, chopped
salt & pepper to taste
1/8 teaspoon dried thyme
1 1/2 cups chicken broth
3/4 cup milk
PIECRUST
2 cups unbleached or white ap flour
1/4 teaspoon salt
1 cup vegetable shortening… I used Earth Balance a non-GMO organic canola/soy mix shortening but any kind will do
1 large Egg
2 tablespoon ice-cold water
Directions:
Step 1: Place a large saucepan on the stove and turn the heat to medium.
Step 2: Add in the butter and allow it to melt.
Step 3: Add in the flour and cook until thick.
Step 4: Add in the onion, salt, pepper, and thyme. Stir until well mixed and thick.
Step 5: Remove from the heat and add in the milk and broth. Stir until well mixed.
Step 6: Put it back on the stove and allow it to boil for another minute while stirring frequently.
Step 7: Add in the veggies and turkey, then remove from heat.
Step 8: Prepare the oven and preheat to 220 degrees C or 425 degrees F.
Step 9: Place 1 pie crust in a 9-inch pie pan and fill it with the mixture.
Step 10: Top the crust with the other crust and pinch the sides together.
Step 11: Poke small holes for ventilation using a knife or fork.
Step 12: Place it inside the preheated oven and bake for 35 to 40 minutes or until the colour turns golden brown.
Step 13: Remove from the oven and allow it to cool at room temperature.
Step 14: Serve and enjoy!
To Make the Crust:
Step 1: In a medium mixing bowl, mix flour and salt
Step 2: Add the shortening in the middle of the flour mixture and mix until well combined.
Step 3: In another mixing bowl, add the water, egg, and vinegar. Beat until well mixed.
Step 4: Transfer the mixture over the flour mixture and stir using a fork.
Step 5: Split the dough into two. Form the first one into a circle and roll it out into 2 sheets of waxed paper.
Step 6: Invert the sheet into a pie plate and peel the second sheet to fit into the pan.
Step 7: Invert the crust over once the turkey mixture is in the pan. Make sure to seal the sides.
