📌Ingredients:
2 pounds extra-lean ground beef
2 teaspoons coarse kosher salt, not fine salt
¼ c. avocado oil mayonnaise
¼ teaspoon black pepper
1 tablespoon minced garlic
olive oil spray for the baking dish
¼ c. unsweetened ketchup
1 medium onion finely chopped (about 6 ounces)
1 ½ c. shredded sharp cheddar divided (about 6 ounces)
2 tablespoons olive oil
1 tablespoon mustard
Instructions:
Step 1: Prepare the oven. Preheat it to 400 degrees F. And using olive oil, grease a 2-quart baking dish.
Step 2: In a large skillet, heat the olive oil for about 2 minutes over
medium-high heat. Once the oil is hot, add the onions and ground beef to the skillet and cook for about 5 minutes, stirring and breaking the meat until browned and the onion is tender. Drain any fluids from the bottom of the skillet, then place the ground beef mixture back to the skillet. Season with black pepper, garlic, and kosher salt. Continue to cook for a couple of minutes, stirring. Remove from the heat, then stir in the unsweetened ketchup, mayonnaise, mustard, and a cup of cheddar.
Step 3: To the prepared baking dish, transfer the mixture from the skillet and sprinkle with the rest of the cheese. Place in the preheated oven and bake for about 15 minutes until the cheese has melted and the casserole has been heated through. Alternately, you can broil the casserole for about a minute or two until the cheese has melted. Just make sure to place the dish at least 6-inches below the heating element.
